My name is Heidi and I am a northerner, too. I grew up in Westchester County, NY and moved here about 6 years ago. There are a LOT of northerners in this area so don't worry about being accepted. And attending church is not a requirement to be accepted.
As for a bakery/cafe/store for people with food allergies/intolerances - I would suggest you do some more research and talk to some of the locals. We have a wonderful health food store here called Nature's Own. They might be interested in selling your products. They also have a restaurant called 195 that is awesome. My feeling is that it would not work if you had such a narrow focus. but that is just my opinion.
